Supervise, co-ordinate and schedule the activities of staff both kitchen and lodge.
Estimate and order ingredients and supplies for meal preparation and lodge guests
Prepare food order summaries
Establish methods to meet work schedules
maintain records of stack, repairs, sales and wastage
Train staff in job duties and sanitation and safety procedures
Ensure that food and service meet quality control standards
Select staff for the kitchen and lodge
Develop policies and procedures
