Description

The cooking of Vietnamese and Canadian dishes and some Italian dishes on the menu per Customer Order
-Clean, cut and marinate meat, fish, and chicken
-Using different methods of cooking such as frying, steaming, boiling, and roasting
-Maintain Inventory and ordering food and kitchen items
-Ensuring stock is rotated, checked, and stored correctly
-Regulate temperatures of ovens and other cooking equipment
-Setup and Maintain Buffet
-Training of other interested kitchen staff
-Clean and properly maintain kitchen and work area
-Daily prep work
-Assist chef with new dishes
-Maintain an outstanding working relationship with staffs and guests
-Follow Saskatchewan Health standards.
-Communicate fluently in English and Vietnamese are an asset.
-Possess background and knowledge in both Western and Vietnamese cuisine is an asset.
-Obtain related experience in luxury hotels, and restaurant is an asset.
Knowledge of principles of quantity food preparation, portion control and meal service.
Ability to follow menus and to adjust recipes to apply to quantity cooking.
Ability to prepare and supervise special diets by formulas, recipes and daily work charts, involving careful weighing or measuring of ingredients and servings as required.
Knowledge of proper methods of handling and storing food. Ability to supervise, instruct and give on-the-job training to others and evaluate programs.
Ability to plan work and co-ordinate kitchen activities to meet meal schedules.
Knowledge of principles and quantity cooking and experience in quantity cooking of vegetables, meat, fish and poultry, baked goods, etc., utilizing standardized metric recipes.
Knowledge of foodservice sanitation standards, personal hygiene and safety
